Ingredients:
- Fresh or Frozen Lobster Chunks – 24 oz
- Garlic – 4 cloves
- Red Onion – ½
- Carrots – 2
- Celery – 4 stalks
- Tomato Paste – ½ cup or 4 fluid ounces
- Seafood Broth – 1 quart or 32 ounces
- White Wine – 2 cups or 16 fluid ounces
- Olive Oil – 1 tablespoon
- Brandy – 1 ounce
- Heavy Cream – 1 cup or 8 fluid ounces
- Bay leaves – 3
- Salt – 1 tablespoon
- Peppercorns – 1 teaspoon
- Paprika – 1 teaspoon
- Thyme – 1 teaspoon
- Xanthan Gum – 1 teaspoon
- Optional - Fresh Lemon Juice – 1 tablespoon
- Optional - Parsley (to garnish)
Alternate Ingredients/Brand Recommendations
- Tomato Paste -> Fresh Tomatoes for lower carb content (may alter flavoring)
- Olive Oil -> Coconut Oil or Avocado Oil
- Seafood Broth -> 100% natural Aneto Fish Broth
- Carrots -> broccoli or bell pepper
- White Wine -> Sauvignon Blanc

Instructions:
- Start with finely chopping the onions, garlic, celery, and carrots.
- In olive oil, cook your onion in the pot, then add garlic and cook until the bottom of the pot begins to blacken a little and crust at the bottom.
- To deglaze the pot, add in your white wine, then toss in your celery and carrots.
- Pour in broth, brandy, and tomato paste. Stir to blend.
- Add in your spices, then leave the soup to simmer for an hour.
- Once the soup is cooked, remove, and discard the bay leaves.
- Slowly, incorporate pea size amounts of xanthan gum at a time, while stirring the soup. It should begin to thicken.
- It is important to note that the soup is blended prior to adding the lobster chunks for an authentic feeling.
- Pour your soup into a large blender and blend until creamy.
