Ingredients:
- 1 small butternut squash (pre-washed and cut or Peel, Seed, Cut into 1-inch pieces)
- 1 small delicata squash (pre-washed and cut or Peel, Seed, Cut into 1-inch pieces)
- 1 ½ sweet potatoes (peel and cut into 1-inch pieces)
- 1 (1 lb) rutabaga (Peel, cut into 1-inch pieces)
- 1 red potato (Peel, cut into 1-inch pieces)
- 1 carrot (sliced)
- 1 onion (sliced)
- 1 tablespoon of dried Rosemary
- 1 tablespoon of dried Thyme
- ½ teaspoon of fried Oregano
- 1 tablespoon of extra virgin Olive Oil
- 3 dried Bay Leaves
- 1 dash of Lemon Juice
- 1 Dash of Red Wine Vinegar
- 1 pinch of salt
- 1 pinch of black pepper

Alternative Ingredients/Brand Recommendations
- Sweet Potato -> Pumpkin (may alter taste)
- Red Potato -> Jicama, Radish or Cauliflower (may alter taste, based on preference)
- Extra Virgin Olive Oil -> Coconut Oil or Avocado oil
Directions
- Preheat oven to 400 degrees F (200 degrees C), place Dutch Oven Pot in oven.
- In a large bowl, mix the butternut squash, sweet potato, rutabaga, and red potato pieces. In a small bowl, mix the dry ingredients: rosemary, thyme, and oregano.
- Drizzle Olive Oil over the vegetables and sprinkle the herb mixture. Toss to coat the vegetables with the oil and herbs.
- Take your Dutch Oven Pot out of the Oven and place mixed vegetables inside the pot. Over top of the vegetables, scatter your bay leaves and drizzle lemon juice and red wine vinegar.
- Roast in the Oven for about 45 minutes, stirring every 15 minutes. Season with salt and pepper once finished.
