Ingredients:
- ½ Japanese eggplant (trimmed ends)
- ½ Zucchini (trimmed ends)
- ½ Yellow Squash (trimmed ends)
- 2 Roma Tomatoes (trimmed ends)
- 1 tbs extra virgin olive oil
- ½ sweet onion (diced)
- ½ red bell pepper (diced)
- ½ Yellow bell pepper (diced)
- 2 cloves of garlic (minced)
- Salt and pepper to taste
- 14 ounces of crushed tomatoes
- 3 fresh basil leaves (chopped)
- 4 fresh basil leaves (chopped)
- 1 tbs fresh parsley (chopped)
- ½ clove garlic (minced)
- Salt and pepper to taste
- 1.5 tbs extra virgin olive oil

Extra Virgin Olive Oil -> Avocado Oil or Coconut Oil (may alter taste)
Directions:
- Preheat the oven to 375 degrees Fahrenheit.
- Slice your vegetables (eggplant, zucchini, yellow squash, and tomatoes) into thin round circles.
- In a cast iron pot, heat the olive oil over medium to high heat. Saute the onion, garlic, and bell peppers until soft (about 10 minutes). Season to taste with salt and pepper, then add in your crushed tomatoes Stir until the ingredients are fully mixed.
- Remove from heat and add in your fresh basil. Split sauce into each mini cast iron pot. Stir and then smooth the surface of the sauce.
- Arrange sliced vegetables in an alternating pattern on top of the sauce.
- Cover each mini pot and bake for 40 minutes. Uncover and bake for another 20 minutes, until vegetables are tender.
- Take a small bowl and mix the herb seasoning ingredients.
- Pour over the cooked Ratatouille.
